Food and Family | Chloe Banks Shares Her Fave Bistro C Cocktails and Menu Items

Ask any Noosa local for a restaurant recommendation and Bistro C will get a rave. It’s one of those rare places where every element gets five stars. The location – beachfront on Hastings Street with arguably one of the most beautiful views on the planet. The food – fresh, flavourful, satisfying, contemporary and always evolving. The atmosphere – sophisticated, yes casual with that relaxed beachy vibe you come to expect in Noosa.

The Bride’s Tree team have been big fans for a long time, so we wanted to learn more about Bistro C and just how they manage to seamlessly run one of the region’s most successful restaurants and wedding venues. We spoke with Chloe Banks, who works in the family business with her mum and Bistro C owner, Lorri, and sisters Cassie and Hayley.

Bistro C is one of Noosa’s most popular restaurants on the famous Hastings Street. What do you think keeps the locals coming back?

We’ve always prided ourselves on several things. Friendly fast service, consistency and innovation. Oh, and the view may help!

Tell us about your food.

Our menus feature local seasonal produce our region has to offer and our meals are creative, but not arrogant. We have always tried to offer menus that are simple in their own flavours. Dayle Merlo, our executive chef for 20 years, and my mum and owner, Lorri, work very closely together in creating new and exciting dishes every menu change.

Do you have a signature dish?

Definitely – Our Famous Calamari served with sweet chilli sauce and our Seafood Spaghetti, other wise known as our “pans”.

One thing I always order when I come up for dinner is one of your delicious espresso martinis. Your bar staff sure know where it’s at. Which cocktail do you think is the best on the menu?

My personal favourite is the Chilli and Coconut Margarita, however I have to be honest there is nothing better than one of our Mango Daiquiris with the calamari and a rocket salad on a hot summer’s day.

Chloe, I understand Bistro C is a family business. When your family gets together, do you all cook together?

Yes it is a family business and surprisingly we actually all work very well together, however I have to be honest, most of the cooking is done by mum, you just can’t beat her food, I don’t think I have ever had a bad meal that she has made. She does the best succulent pork roast with crispy pork crackling, soft potatoes that are cooked in chicken stock and parsley, roast pumpkin, parsnips, purple carrots and creamy cauliflower. It’s actually making me hungry thinking about it!

My sister’s favourite is her crumbed chicken, served with iceberg and cucumber salad and slow cooked potatoes. The secret ingredient though is the lemon and mayo she serves it with. I know it sounds simple, but her flavours and cooking is so spot on that she can make something so simple taste like heaven.

How was Bistro C born? And what does the “C” stand for?

It’s funny, a lot of people ask what the C stands for. It’s bistro by the sea, ‘Bistro C‘. I believe it originated around 1998 when they felt Diloz’s needed a revamp, to modernise the restaurant to fit in with the look at the time. Mum has always been a big believer in keeping up-to-date – actually in front I should say – of current trends and fashions… It’s one of the many reasons that keep all our long-standing clients coming back.

Go on, Chloe, make us jealous – what are you having for lunch today?

Coconut chicken salad – snow pea tendrils, asian herbs, shredded womb, marinated tofu, cucumber, toasted cashews, crisp noodles, nuoc cham dressing.

What would you say to a bride and groom looking for a Noosa wedding venue with amazing food?

Our weddings are spectacular, the venue and views speak for themselves.

Amanda loves Ben | Bistro C Wedding in Noosa

For their first Valentine’s Day after their wedding, Amanda commissioned Australian fashion artist, Sarah Jane, to illustrate a wedding memento for her now husband, Ben. She presented the artwork together with their vows. Of course their wedding portrait wouldn’t be complete without including their fur babies, Jaxon and Wilson, who played a very special part in their Noosa ceremony.

Scroll to see their starring moment walking down the aisle as ring bearers, but first read a few words from the bride about their beach wedding in Noosa, and Hastings Street restaurant reception at Bistro C.

How they met

“Well… we “knew of” each other for the last 10 years or so and then Australia Day 2014 I added him on Facebook. We started chatting straight away and before we caught up, Ben sent roses to my work from my fur baby Wilson. Stroke of genius there and the rest is history.”

Why they work

“We want the same things, we both wanted to settle down, get married and start a family (working on that now). We both LOVED our dogs and had similar careers – Builder and Real Estate Agent. Most importantly, we understand a good marriage takes work. It doesn’t stay “perfect” for 60 years with no effort.”

Wedding planning priorities

“We had just started a business so a wedding planner was a must. Location was the next most important and we fell in love with the Noosa locations we picked. Having enough space for our 140 guests, writing our own vows, and of course the outfits! I had two pregnant bridesmaids, so that made dress shopping interesting. We also got secret dance lessons for our bridal dance.”

Special gifts

“For the bridesmaids I gave them all a box the day before our wedding which had lovely dressing gowns to get ready in and Mimco jewellery for the day. I got personalised coat hangers for everyone. The boys got Country Road ties. My husband bought me a gorgeous pearl bracelet the day before our wedding that matched the pearl earrings I was wearing on the wedding day (complete surprise) and he had roses and a beautiful card delivered the day of our wedding. I had custom made cuff links and tie clip for him.”

“We had our two fur babies, Jaxon and Wilson, as the ring bearers. So my sister walked down the aisle first with them and the rings were tied to their collars. We LOVED having them as part of the day.”

Wedding Secrets

Biggest splurge: I don’t think there was one big splurge item. I guess it was a luxury having a wedding planner but that was totally necessary.

Best bargain: The boys bought their suits on sale, and we were able to supply our own alcohol for a couple of hours between the ceremony and reception.

“We decided to have a cheese wheel cake and cut it at the ceremony. This meant everyone got to just have champagne and cheese in the park for a couple of hours while we got photos. That allowed us to do all the family photos in the same location as the rest of the guests too.”

Intimate Destination Wedding – Little Cove, Noosa

Natasha and Adam, along with their two children, Betty and Teddy, travelled a long journey to their wedding in Little Cove, Noosa. The journey started in 1997 when the UK couple met in their home town. After 15 years, two children and a very long flight, they made their vows in a very intimate ceremony, followed by a carefree reception at Bistro C, Noosa.

While they know it would have been easy to have a huge wedding with all the trappings back in the UK, a holiday to Australia and a Sunshine Coast wedding with only seven guests was exactly what they would call the perfect wedding day. Natasha says her best choice, aside from choosing to have a destination wedding on the Sunshine Coast, was to hire Kim from Weddings of Noosa to coordinate their special day.

Location was key, and the intimacy of Little Cove in Noosa was just perfect for its privacy and a simply beautiful setting. Locals made the day even more special. Well wishers on the beach included a pair of sweet little girls, who made out a heart in stones with the word ‘love’ inside just for them!

Natasha’s idea for styling for her wedding was simply to look not so styled, but to embrace the simplicity of a beach look with a touch of vintage and a splash of bohemian style. The relaxed, intimate, personal, simple and stress-free wedding Natasha and Adam dreamt of was beautifully captured by Lindy Photography.

“I couldn’t believe how having a look around could save us so much money. I will never believe that you have to spend a fortune on a wedding for it to look great. By having a mindset of what you want your wedding to look like makes you buy the right things and not be wasteful and extravagant.”

“We had picked our own wedding playlist for the ceremony. As Adam waited for me ” The Scientist” by Coldplay played a firm favourite of his. “At Last” by Etta James was my entrance song, a very personnel and appropriate words that at last we finally did it!”
