Here to share her trend prediction in the world of wedding cakes is the always sweet Ellana from SweetP Cakes and Cookies.

The roaring 20’s – here again!  As with the start of every year, I reflect on past cake trends and wonder what the new year ahead will bring. Here is a little look into my crystal ball to see how I think cakes will look in 2020.

Organic + Natural

I predict we will see strength in organic and natural-looking cakes as the push in society for a sense of mindfulness and sustainability is at the forefront of couples’ minds. But that doesn’t have to mean boring. Think Kon Mari – the perfect blend of not-too-much and not-too-little.

Statement Florals

I think we will see simply-finished cakes almost being cheated of their minimalism with statement florals being strongly paired with clean-lined or softly-textured cakes.  This is where couples’ personality can come through. Dried floral arrangements creeping up the side of cakes as if it is growing out from the cake board, or fresh florals, reflexed rose petals with white space enhancing their colour and movement siting proudly at the top, or a combination of wispy, bleached, fluffy dried elements, perfectly balanced with fresh florals.

Colours of the Year

Panatone 2020 spring/summer palette features both brights and natural tones and I think we will absolutely see both in the wedding cake world.  Statement colours will come through florals or couples steering away from traditional white and incorporating a neutral tone as their base colour on their cakes.

As with every year, my advice to couples when considering trends is to take one or two elements and use them in subtle ways which is personal to you both.

When I first clapped eyes on one of Zoë Clark‘s famous cakes, I could barely pick my chin up off the floor. If I’d held a real flower up next to her sugar flowers, I honestly couldn’t tell the difference, such is her skill. Wedding cakes Sunshine Coast have never looked (or tasted!) better.

It’s time to meet Zoë. You ready?

Zoë, tell us your wedding cakes business origin story.

I started my own business back in London in 2008 having spent a couple of years working for other bakeries. I felt it was time to start producing my own cakes to my own taste and style. I started off working from home for a couple of years, which you were allowed to do in the UK. I was extremely lucky and the business took off very quickly so we soon decided to open ‘The Cake Parlour’ to cater for our growing list of clientele.

Over six years I employed a small team of super talented staff and we made all kinds of cakes, mainly wedding cakes. Our cakes were delivered across London, around the UK and even abroad! We got to see some amazing venues and worked with lovely clients, including a few celebrities, which was so exciting (but a bit scary!)

I also began teaching a lot more and started to write a few cake decorating books, which made my work a lot more known around the world. In 2012, I produced a range of cakes for the famous London store Fortnum and Mason, and during this time got to make a cake for the Queen and her diamond jubilee.

As our eldest children got to high school age, we decided to return to Australia for a better lifestyle. I took a short time off to spend with my newborn and settling in. Last year, however, I decided to get back into the wedding industry and introduced myself to the wonderful wedding industry on the Sunshine Coast.

What are the predicted trends for wedding cakes in 2019?

Buttercream finishes are becoming increasingly popular. As well as textured finishes, we are seeing a lot more floral touches created using palette knives and piping tips. Rough edges around the tops of the tiers are also quite popular thanks to Meghan Markle and Prince Harry’s rustic wedding cake display last year.

Take us through the process of your on-the-day job. 

I’m usually adding the final touches to the cake before delivery and photographing it for any potential social media posts or website additions. I then make sure the car is fully cooled before putting the cake in. Driving carefully and anticipating drivers’ action around you is a must to avoid any sudden stops or swerves. When I arrive at the venue, I make sure the table is ready for the cake and that the room is cool. I usually put the cake on the stand, and add any additional sugar or fresh flowers.

You have a completely free day on the Sunshine Coast. Where are you going? What are you doing? And who are you with? 

To Noosa! I love it. I can honestly say it’s probably my favourite place in the world! I’d go with the family. I love the beach front, and walking around to the national park. I love Gympie Terrace too. I’d have lunch at one of the restaurants in either place ideally just with the husband though, so it’s more relaxing! This is where I want to have my dream cake shop and dessert bar one day!

Share something about you most people wouldn’t know. 

I love teaching and making tutorials as much as making cakes for clients. I love sharing my knowledge with others and often travel to other countries for students wanting to learn my techniques.

I’m planning to run a few classes this year for those wanting to learn about wedding cakes and favours. The classes will be aimed at those wanting to have a go at their own cake or perhaps theirs friends or relatives wanting to make a cake for a wedding. Girls (and boys) can also book private ‘hen party cake decorating’ classes.

So you have picked the perfect wedding cake with your cake designer, the next step in the process is styling the cake at your wedding reception venue.  For those on a budget, additional styling around your cake is a great way of featuring a simple cake and still making a statement.  

Ellana Haddrill from SweetP Cakes and Cookies has put together a couple of tips to help you with the process of styling your cake perfectly.

The Venue

Ask your venue or planner where your cake table will be located.  If it is normally assigned to an out-of-the-way corner or an area where the backdrop or lighting is unappealing, don’t be afraid to ask for alternatives. You don’t have to conform to tradition,  you can place your cake at the entrance of your reception venue, where your guests can take the time to view, talk about and photograph your cake. Alternatively, you can place your cake in the centre of your reception, or even in the lounge area.  It is important to consider some practicalities, such as keeping your cake out of direct sunlight or heat, and out of areas where guests may accidentally knock the cake over.  Yep, the dance floor may not be the most practical place! 

The Table

Many venues and stylists have beautiful tables or sideboards, which are a feature in their own right. If the only option is a standard table, buying a tablecloth that complements your cake and theme is another way of giving your cake a little ‘wow’. A beautiful piece of linen or lace softly crumpled across the table, or a long piece of macramé can elevate the whole look of your wedding cake. 

The Background

Think about the background to the cake table.  How will it look in photographs?  Is there anything unsightly in the background, like powerpoints, kitchen entrance way, or speaker wires?

Cake Stands

Many cake designers and stylists can provide you with a cake stand in their package.  Do check it is going to be the right size for your cake and consider the weight of the cake in selecting your stand.  Ask your Cake Designer for advice, believe me when I say it is likely they have a cake stand ‘addiction’.

Props

Props can be a fantastic way of enhancing a simply designed cake. Think deer horns, flower wreaths, candles, glamours mirrors, or even some industrial bricks – the options are limitless.
