Brent Colautti kicked off his catering career after many years managing bars and restaurants. Just a few years later, his catering business has grown to employ 30 people, who have been part of 400 weddings and counting. Their custom-designed kitchen on wheels takes them to both indoor and outdoor weddings and events from the Sunshine Coast to Byron Bay – they see the travel as one of the perks of the job! 

From their stylish food van, they create restaurant-quality food, customising their menus to suit the occasion, whether it be a travelling feast, banquet, sit-down meal, grazing table – any dining style, and within your budget. Any and all dietary requirements can be accommodated and best of all, they don’t stop at the food. The Something for Catering team includes some seriously talented mixologists and they offer a carefully curated beer, wine and spirits list to take care of all your wedding beverages.

Brent, you have a really interesting origin story that didn’t initially include working on weddings. Tell us about your business evolution… 
I started this business with three of my best friends off the back of a year of minimal work and a bank balance I wouldn’t have been proud of in school. We never intended to be in the wedding industry, it fell in our lap after one event. It was then my business plan shifted towards the wedding industry, identifying a gap in the market with quality offsite catering and customer service.
 
In 2015 we were lucky enough to be involved in 30 weddings we have now been involved in about 400 weddings and over 800 events. My history in the wedding industry has been amazing, I’ve learnt so much more than I thought I could have. The pure enjoyment we get out of reading a 5-star review, or a nice email saying how we made a couple’s day, is an achievement we all strive for. I also admire the amount of super mums and women out there in this industry that are entrepreneurial and watching their collective talents help shape the industry.

You have a completely free day to hang out on the Sunshine Coast. Get out about! Where are you going, what are you doing and who are you with?

I’m 100% with my fiancé Aimee and two young children, Arlo and Halle. We are going to the farmers markets, beach, parks or camping in one of the many beautiful spots on the coast. If I’m not with them I’m bar hopping or eating out with Aimee and/or my friends.

Trends you’re predicting for 2019?
I think more couples will look to optimise their wedding budget by becoming increasingly mindful of their guest list, choosing only to invite those closest to them in favour of offering a better overall quality experience.
